2021 Meat Inspection
Mission Statement Protect public health and ensure consumer confidence in Illinois meat products by inspecting meat and poultry slaughter and processing operations.
Program Goals and Objectives
  1. Provide safe and high-quality meat products in Illinois by ensuring a regulatory-compliant meat and poultry slaughter and processing industry.
    1. Reduce the percentage of actionable findings.

        Explanatory Information

        The Bureau of Meat and Poultry Inspection conducts inspections at meat production and slaughter facilities at state licensed plants, and at federally regulated plants in cooperation with the U.S. Department of Agriculture Food Safety Inspection Service. Inspections and animal samples collected for laboratory analysis aid in detecting diseased animals to protect public health.
